Easy Appetizer

For New Year’s Eve we got together with friends for a progressive dinner that took place at 4 different homes in our gayborhood. We were in charge of appetizers and cocktails at Redbud Terrace and so we were looking for something interesting and flavorful to serve to our guests. One recipe that I fell in love with were these mozzarella-stuffed cherry tomatoes from Real Simple magazine. These bite-size appetizers were easy to prepare and tasted wonderful! Mozzarella-stuffed Cherry Tomatoes
Makes 36 pieces

  • 36 cherry tomatoes, stemmed
  • 1lb mozzarella, diced
  • 3 tbsp fresh basil, chopped
  • 2 tbsp olive oil
  • salt (I used sea salt) and pepper to taste
  • 2 tbsp balsamic vinegar

Cut a thin slice off the top of each tomato. Scoop out pulp with melon baller or small spoon. Lightly salt inside of tomatoes and set cut side down on a paper towel to drain. In a medium bowl, combine cheese, basil, oil, and salt and pepper to taste. Turn tomatoes right side up and divide cheese mixture into each tomato. Drizzle with balsamic vinegar.

Dandy Idea: I purchased mozzarella string cheese sticks at the grocers. I simply unwrapped them and cut them up with my kitchen shears into tiny cubes!
