Easy Low-Carb Dinner

Looking for a low carb dinner that tastes great! My husband surprised me with this delicious recipe using shirataki noodles…yes…the tofu based noodles. 

At first, I was a little apprehensive about eating tofu noodles. However, after taking a bite, I found that I really liked them and I love the fact that they are low carb! 

The recipe, which is easy and quick to make, is below.


  • 1 tbsp. of Olive Oil
  • 1 packet of Tofu Shirataki noodles (you can find them in the refrigerated section of Whole Foods)
  • 1/2 cup of Hearts of Palm
  • 2 tbsp. Pesto


To prepare, heat EVOO in a sauce pan. Add the thawed shrimp, pesto and sliced hearts of palm. Heat thoroughly and serve over the Shirataki (which should be prepared based on the package directions.)
